A Table That Travelled Half the World

Zafran - the Dari word for saffron - is named after the golden thread that runs through every celebration dish in Afghanistan. Our family's story begins in Kabul, in a kitchen where rice was measured by hand, spices were toasted fresh, and hospitality was a matter of honour.

When we made Christchurch our home, we carried those recipes with us: the Kabuli Palaw served at weddings, the mantu folded by three generations of hands, the chai that ends every meal and starts every friendship.

Today Zafran is where we set that same table for you. Everything is cooked the slow way - because in Afghan cooking, time is the most important ingredient.

Cooked with Heart

No shortcuts, no pre-made bases. Stews simmer for hours, naan is baked to order, and every plate leaves the kitchen as if it were for family.

Honest Ingredients

Halal certified meat from local butchers, produce from Canterbury growers, and spices ground in small batches for freshness.

Hospitality First

Melmastia - hospitality - is the heart of Afghan culture. Expect generous portions, warm welcomes and chai that never runs dry.

In the Kitchen

Charcoal, Saffron and Patience

Our kitchen is built around two things: a charcoal grill and a tandoor. The grill gives our kebabs their smoky depth; the tandoor turns out naan blistered and warm, minutes before it reaches your table.

The rest is patience. Palaw rice is soaked, parboiled and steamed with saffron. Lamb shanks braise for the better part of a day. Mantu are folded one by one, each morning, never frozen.
