Zafran began around a family table, where rice was steamed with saffron, lamb simmered slowly until it fell from the bone, and no guest ever left hungry. We brought that table to Christchurch.
Every dish is prepared fresh each day - naan from the tandoor, kebabs over charcoal, and the long-grain palaw that gives Afghan cooking its name for generosity.
